The Cheese Diaries Week 5
There are lots of blue cheese nay sayers out there, and my boyfriend is one of them. One of these days, I’m going to leave him and elope with a wheel of Bay Blue from Point Reyes.
This cheese tastes like oatmeal cookies on the beach in late summer. The texture is akin to fudge with pecans, it’s rich with little chewy crystals. Eat this cheese with patience and discover deep, buttery pockets of flavor that melt away into cream. Point Reyes pastures are close to the Pacific ocean, and the early morning fog rolling over their land imparts a salty aroma into the milk. Hints of wheat and sand flood the sweet, crumbly cheese. The cheese starts with a slight burn, then transforms into buttery sweetness and finishes with a milky punch. It’s a seriously luxurious and remarkable cheese.
I enjoyed this cheese a top toasted and buttered california fruit and nut bread, local honey and honey crisp apples. I couldn’t help but think of caramel apples as I enjoyed it. What a cheese…
