You want to refresh and relax with a little blueberry and basil?
Pour this funky syrup over cornmeal flapjacks, use in a dressing for spinach salad, or add to whatever your poison for a luscious summer cocktail. Homemade syrups are easy, rewarding and keep for several weeks.
- 1 cup sugar
- 1 cup water
- 1 cup fresh blueberries
- 1 cup fresh basil leaves
- 2 teaspoons lemon juice
Add sugar and water to a small saucepan and heat over medium. Add blueberries and basil, smashing the blueberries with the back of a spoon.
Add lemon juice and a pinch of salt. Bring to a simmer and heat, stirring occasionally, until the syrup sticks to the back of the spoon.
