A wedge of cheese and a cold beer is my favorite easy meal.
I love unwinding from the day with something so satisfying and simple to prepare.
Crisp, refreshing ales are choice in the summertime,
which is why I reached for the One Tun Pale Ale from Colectivo Keg Co. in Wisconsin.
Cheese notes: Deep golden in color, with a smooth texture that melts in the mouth.
Sweet, nutty flavors with notes of cultured cream and summer grass.
Beer notes: Light, crisp, and fizzy with notes of pine, citrus, and a kiss of malty sweetness.
Why it works: The effervescence of the beer slices right through the fatty cheese.
The beer’s notes of pine and citrus also tease out the earthy notes in the cheese.
Because they’re from the same place, they have similar qualities of flavor and strength.
Do it at home: Get yourself a wedge of Pleasant Ridge and your favorite pale ale,
or switch up the cheese with something similar, like Gruyère, Comté, or Alpha Tolman (from Jasper Hill Farm in Vermont).
Make sure to select an effervescent beer with full flavor, so the cheese isn’t overpowering.
