Like a Glorified Cheez-It.
Parmigiano Reggiano can do more than top pasta. While it’s too firm to melt like cheddar or mozzarella, the King of Cheese bakes up into golden, crunchy cheese crisps in the oven. You know when you make a grilled cheese and some of the cheese falls onto the plan and gets all crispy? It’s like that, only bigger. Cheese crisps are a quick and easy appetizer or snack. I combined mine with a bit of rosemary, which makes a festive pairing with sweet Parmigiano.
