Show a sweet potato some love!
Lil Sweet Pot can be your best friend if you let her: she’s extremely high in both Vitamin A and beta-carotene, can help regulate your blood sugar, and she’s extremely versatile in the kitchen.
You can enjoy Sweet Pot naked, and she’ll taste perfectly delicious, but that’s not really enjoying her at her best. According to WHFoods.com, “It can be helpful to include some fat in your sweet potato-containing meals.” You know what we’re thinking: let’s put some cheese on dat!
Spinach and Feta Stuffed Sweet Potatoes
- 1 medium sweet potato
- 1 handful baby spinach, rinsed and torn
- 1 oz crumbled feta
- Balsamic vinegar
- Salt + Black pepper
Preheat oven to 425°F. Pierce sweet potato several times and rub with olive oil. Roast on a baking sheet or tin foil for 40-45 minutes, or until extremely soft and velvety.
Let sweet potato cool for 5 minutes. Stuff with spinach and feta. Allow to melt together. Garnish with a drizzle of balsamic and fresh ground black pepper.
Mix it up: you can stuff your Sweet Pot with blue cheese and walnuts, caramelized onions and Gruyere cheese, or double cream brie and pesto.
