Once upon a time, all Stilton, England’s famous blue, was raw.
That changed with the industrialization of food.
Now Stilton legally has to be made with pasteurized milk.
Fortunately, one raw-milk version has survived that transition,
rebranding as “Stichelton” and preserving the tradition.
