Going meatless is a great thing to do for your body. Meat is delicious and I love to indulge, but I need to take breaks now and then. We all do.
While these do not taste at all like meat, they’re pretty darn tasty. You can toss them on to pasta or on a meatball sub.
the learning curve
- I bet you can make these vegan by substituting the egg for another binder, but I’m not sure how. Leave a comment if you have suggestions.
- If the mixture looks a little moist, add extra breadcrumbs.
- 1 package seitan
- 1/4 white onion // 2 cipolini onions, chopped
- 2 eggs or “eggs”, beaten
- 1/3 – 1/2 C bread crumbs
- 3 cloves garlic, minced
- 2 T dried sweet basil or fresh parsley
- S + P to taste
- 2 T vegetable oil
- Food Processor
Add all ingredients to the food processor and pulse until combined.
Form into balls, about 2″ in diameter.
Heat oil in skillet over medium. Brown the meatballs on all sides and cool.
These are best eaten the day they are made. Serves 4.
