Roasted Tart Cherries
Gently roasting tart cherries teases out their sweetness and softens their texture. Pair with goat gouda or brie.
Servings: 4 people
- 1 cup sour cherries, pitted
- 2 tbsp honey
- zest of 1 lemon
- 1 pinch salt
Preheat oven to 400°F. Cover the baking sheet with tinfoil.
Toss cherries in honey, juice, and zest. Season with a pinch of salt.
Spread the cherries evenly onto the baking sheet.
Roast for 15 minutes, stirring halfway through. Let cool.
Pour cherries and their juices into a jar and cover. Store in the refrigerator. They’ll stay good for about a week.
